Quilt Soup :: Hand Made Quilts and Home Made Soups: "TOMATO FLORENTINE SOUP from the kitchen of Ruth Evans
2 T veg oil
1 cup chopped onion
6 cloves garlic, minced
1 tsp dried oregano
� tsp dried thyme
� tsp dried basil
� tsp fresh ground pepper
� tsp salt
� cup red wine
8 cups chicken broth
2 – 14 oz cans chopped tomatoes
1 – 12 oz can tomato paste
1 – 10 oz package frozen chopped spinach (thawed & drained)
1 T balsamic vinegar
Grated Fresh Parmesan Cheese
Heat oil, add onion & garlic, stir in seasonings & saut�for few minutes. Deglaze pan with red wine.� Add rest of ingredients except vinegar and cheese.� Simmer for 10 minutes.� Turn off heat, add vinegar and serve with grated cheese
