Welcome to Tammy Tadd Designs - Fabric, Sewing, and Quilting Patterns: "Absolutely Wonderful Blueberry Muffins
Makes about 72
1 (15 oz) box bran flakes cereal (or close to 15 oz.)
5 cups flour
2 tsp. salt
3 cups sugar
5 tsp. baking soda

Mix this together in a very large bowl, and then add:
1 cup oil*
1 quart buttermilk
5 eggs slightly beaten
2 tsp. vanilla
Mix well with the dry ingredients, and then fold in: 6 cups fresh or frozen blueberries

Fill paper lined muffin tins 2/3 full and bake in a 350 degree oven for 20-25 minutes.
This is a very large recipe that freezes well. I use a #20 ice cream scoop for filling the muffin tins. The very large Tupperware bowl is great for mixing.
NOTE: If you can’t tolerate wheat bran, Oat Bran cereal works equally well (It’s what I use at home) and is usually available in the organic section of the grocery store.
*If you would like to add more fiber to the muffins, just take out 1/2 cup of the oil and add 1-1/2 cups of milled flax seed.
Note:�If you bake these immediately you will have a more textured muffin, the flakes will be more obvious. If you refrigerate the batter for about an hour to allow the cereal to soak up the buttermilk, the muffins will have a smoother texture.�The batter will become very thick but don’t add more liquid.�They will be plenty moist."
